Carrot Applesauce Cake

Kylie was watching Super Why and it was all about recipes and following directions. They made a carrot applesauce cake, so I thought, why not make one at home! :)

I googled recipes and found some good ones. But Kylie is cranky today and has a super short attention span... so I thought why not use box yellow cake mix and turn it into carrot applesauce cake ;)

INGREDIENTS
  • 1 box yellow cake mix
  • 3 cups shredded carrots (I put them in the mini food processor)
  • 3 eggs (or as needed on cake mix box)
  • 1 cup apple sauce (as a substitute for butter)
  • cream cheese frosting
DIRECTIONS

Preheat oven to 375, or as labeled on the cake mix box.
Mix all ingredients and pour into a bundt pan.
Cook according to box directions.
Let cool then frost and enjoy :)

  2. My daughter has been asking to make this cake for a couple of weeks now. My husband and I sat down and watched the episode to take notes of the recipe! Of course, it wasn't accurate. So I googled the episode and this came up! Thanks a bunch! We are going get the ingredients right now to make our carrot applesauce cake.
